Leftover Classical Potato Soup → Potato Soup Shepherd's Pie

Ingredients

  • Two cups of leftover Potato Soup 

  • One cup of lentils 

  • One cup of mixed vegetables 

  • One cup of mashed potato 

Directions

  1. Combine soup, lentils, and vegetables. 

  2. Place in a casserole dish. 

  3. Top with mashed potatoes. 

  4. Bake 30 minutes at 375°F.
