Leftover Classical Potato Soup → Potato Soup Vegetable Gratin

Ingredients

  • Two cups of leftover Potato Soup 

  • Two cups of sliced cauliflower. 

  • One cup of broccoli florets 

  • 2 tbsp nutritional yeast 

Directions

  1. Layer vegetables in a baking dish. 

  2. Pour soup over vegetables. 

  3. Sprinkle with nutritional yeast. 

  4. Bake until bubbly and tender.
