Leftover White Bean Chili → Healthy Chili Veggie Bowl

Why it’s healthier: skipping chips/cheese overload, adding fiber + nutrients

Ingredients:

  • 2 cups leftover white bean chili 

  • 1–2 cups steamed or roasted veggies (broccoli, zucchini, bell peppers) 

  • ½ cup cooked brown rice or quinoa 

  • Fresh toppings: cilantro, avocado slices, lime juice 

  • Optional: plain Greek yogurt (instead of sour cream) 

Instructions:

  1. Reheat chili on the stove. 

  2. Layer quinoa or brown rice in a bowl. 

  3. Add chili on top. 

  4. Pile on veggies. 

  5. Finish with avocado, lime, and a spoonful of Greek yogurt. 

Healthy tip: This becomes a high-fiber, high-protein meal that keeps you full longer.
